Quick and Healthy Dessert: Manic Monkey
One of our favorite quick and easy desserts that’s actually got some healthful components is our version of Ben and Jerry’s “Chunky Monkey.” When we want something that tastes great, but doesn’t cost a caloric fortune, this is our go-to dessert treat. The non-dairy aspect pleases my gut, it only takes a few minutes to make, plus it uses up overripe bananas that my family would otherwise not eat. Win-win-win!
The four basic ingredients are pantry items that we usually have on hand (even overripe bananas!) and are inexpensive to boot. If you have allergies to peanuts, you can even substitute your favorite nut butter and nuts.
I like to surprise my kids with this treat, but it is a very easy way to let even your youngest kids help in the kitchen. Bananas can be sliced with a spreader or a butter knife and peanuts sprinkled by tiny fingers. Any mess will be quickly cleaned up, if my kids are any example!
Serves: About 2
2 ripe to overripe bananas
2 oz dark chocolate, melted
2 Tb peanut butter (or almond butter or other nut butter)
2 Tb peanuts (or walnut pieces)
In a dish that you can slide into the freezer (for about 10 minutes or until you want to eat this) slice two bananas into half inch pieces.
Sprinkle peanuts over top, then spoon peanut butter over all.
Melt the chocolate – 30 seconds in the microwave will do it for this small amount of chocolate. Drizzle the melted chocolate over the top, then freeze for at least 10 minutes, or until chocolate firms up.
Break up the chunks with a spoon and enjoy!
